Basically any fish (i.e. tuna, salmon, flounder, sea trout, catfish), shrimp/prawns, scallops, and oysters when in season, we can do Cajun, lemon pepper, fried, or blackened.
    Poultry –
Whole, half, or quartered chicken, boneless buffalo breast strips, chicken kabobs & Buffalo wings in hot medium or mild. We also smoke whole turkeys and turkey breast in dry rub and injected marinades (holiday season).

Beef –
Beef tenderloin, Prime rib (dry rub only), top sirloin, sirloin tips, beef BBQ, London broils, sirloin beef kabobs and hamburgers.


Lamb –
Lamb shoulder, leg of lamb, and lamb chops.


Pork –
Pork loin with dry rub and injected sauce, spare ribs, baby back ribs, rib tips, BBQ, Whole hog, fresh hams, Italian, bratwurst, polish sausage, sausage kabobs, and hot dogs.


Vegetables –
Mixed vegetable medley, fiesta rice, twice baked potatoes, corn on the cob, cinnamon butternut squash, bacon wrapped asparagus, green beans, baked beans, potato salad, macaroni n cheese, and coleslaw.


  Soups (all homemade)
Savory Chicken or turkey noodle, seafood gumbo, smoke house chili beans and purgatory gumbo (contains no shell fish).
